Benefits:
- WHAT IS PECTIN? Pectin is a form of polysaccharide commonly found in the callus walls of plants. Pectin was first discovered and isolated during the Industrial Revolution in the 19th century. Producers of fruit preserves will obtain apple pomace that can be cooked to yield a thick pectin solution. They will then add it to their protections to increase stability. Today, most commercially produced pectin is made from the peel of citrus fruits, which is then dried and ground into a fine powder.
- APPLE PECTIN: Our food grade Pectin powder can be used for any application. Perfect for Jams, Marmalades, Jelly’s, Fruit Preparations and Fruit Spreads. The main use for pectin is as a gelling agent, thickening agent and stabilizer in food. Craft delicious homemade jams with our Apple pectin! This Food Grade Rapid Set Powder is formulated with expertly selected ingredients to ensure your jams have the perfect consistency every time. Enjoy the convenience of creating your own jam at home.
- USES OF PECTIN: The most common use of pectin is as a thickening or gelling agent in jams, marmalades and fruit preserves. Pectin is also used in confectionery jellies to create a better gel structure. In the 20th century, pectin was used as an ingredient in medicine to control diarrhea. Pectin increases stool volume, which helps calm acute symptoms. Pectin is also used as a demulcent in throat lozenges and is used in special medical adhesives.
- TYPES OF PECTIN: There are basically two types of pectin, rapid-set and slow set high methoxyl pectin. The difference lies in the degree of esterification (DE). Rapid-set ones have more DE and are used for products where you want to encase fruit pieces in a gel, such as in marmalades. Slow-set DEs are slightly lower and are good for clear jellies. Pectin is used in the cosmetic industry as a stabilizer for creams and lotions.
- KEY STABILIZER: Pectin is a key stabilizer in many food products: Fruit applications, Marmalade, Jams, jellies, and desserts, Bakery fillings and toppings, Fruit preparations for dairy applications, Dairy applications, Acidified milk and protein drinks, Yoghurts (thickening), Confectionery, Fruit jellies, Neutral jellies, Beverages, Nutritional and Health Products, Pharmaceutical and Medical Applications. Pectin is considered safe and does not present any danger while handling.
Description:
Pectin is one of the most versatile stabilizers available. It's gelling, thickening and stabilizing properties make it an essential additive in the preparation of many food items. Traditionally, pectin was mainly used in the production of jams and fruit jellies - industrially as well as in household and low- and high-sugar products. This preserves the desired texture, limiting the creation of water/juice on the surface as well as the uniform distribution of fruit in the product.
